Pain à la grecque

Greek Bread is a yeast dough that requires gentle handling.
It really has nothing to do with Greece. It comes from an old Brussels dialect whose pronunciation resembled "Brood van de Grecht".
It would have been bread that the nuns used to make for the poor children. They used a lot of (grape) sugar to give the children some strength. And this was then distributed to the "canals".
